Eat more salads // Potato salad without mayonnaise or yoghurt


It's freaking hot in Germany. Last week I complained about the cold summer in Berlin. And now we are having 40 degrees!! Without an air-conditioner in our old apartment we are literally melting away. So the best thing is to outside to the beach or to have a nice and cosy barbecue with friends in one of Berlins nice parks.
Take a blanket, fresh fruit and some nice salad. Like this yummy potato salad without mayonnaise or yoghurt....just vegan and glutenfree ingredients. It is so easy to make. Enjoy it warm or cold (better decision for these hot days).

How to do it?
You need:
1kg potatoes
1 big onion
10 dried tomatoes
50 gr black olives
olive oil
balsamic vinegar
salt and pepper

1. Wash your potatoes. Cut them into half or quarters (depends on their size). Put them into a roasting tray and mix them with 2 tablespoons of olive oil. Sprinkle some salt and pepper over them. Put them in the oven (200 degrees) for about 45 minutes.
2. In the meanwhile: cut the onion and the dried tomatoes in slices, the olives into half.
3. When the potatoes are brown, take then out of the oven. Let them cool down, if you want to eat your salad cold.
4. Put the potatoes, onions, dried tomatoes and olives into a big bowl. Mix it with 1/2 tablespoon balsamic vinegar and about 1,5 tablespoons of good olive oil. Season it with a little bit of salt and pepper. (be careful with the salt since the dried tomatoes are already salted).
